This soup was amazing! The sliced cabbage tasted like noodles without the carbs!
I decided to get creative with the vegetables in my fridge and put together this super easy soup.
Vegetables needed:
1 bag of cole slaw mix (cut up cabbage, red cabbage, carrots, celery)
Cut up cabbage, kale
Mushrooms (I love portabella)
1 container Organic Vegetable Broth (Whole Foods)
1. Saute all vegetables in a little olive oil
2. Add Vegetable broth and about 1-2 cups of water to cover vegetables
3. Cook for about 15-20 minutes on med-low heat
