Pistachio Crusted Salmon



Tonight's dinner involves the use of the oven to hopefully give me better success cooking Salmon. Last time I attempted it on a pan, but it didn't cook evenly and swas raw in the middle and tasted terrible. This time, there is a pistachio coating the top so i'm trying new things. Along with the salmon, I decided to cut up some small red potatoes and zuchini with a little olive oil, butter and garlic mixed together. Wish me luck, it's cooking as we speak. It looked nice before it went in the oven so that's a good sign.

YUM!


I left school early today because "I wasn't feeling good (cough, cough)" but I had to stop at Whole Foods to pick up some yummy food to cook for the weekend. First I made a spectacular soup to keep myself healthy. I used: carrots, celery, onions, califlower, parsnips, bok choy and wild rice in chicken broth. It came out great. I also bought some healthy munchies that I would recommend to anyone. 1st: Crispy Wheat thins with Hummus is fabulous. 2nd: Veggie chips are quite addicting (thanks Barb for the advice) and 3rd: for the sweet tooth, the healthy version of oreo cookies.

I also indulged in some very good Vermont chocolate and of course the new Ben and Jerry's Creme Brulee Ice cream and .... some healthy treats for the puppies! I have to keep it real right?

Good Luck!!!

To all the brave souls starting the cleanse tomorrow- GOOD LUCK!!! You will all do amazing. We all just finished our 21 days. I would have put a picture of my dinner tonight, but I burnt on the edges and the center was raw! I was only cooking the easiest piece of fish-Salmon. At least the veggies turned out ok. I'm still practicing. I'm just happy I didn't burn myself on the oil from the pan. Today marked the final day of the cleanse. It really has been great. We are all going to continue to eat very similarly and will start a couple different supplements when we are done with our other ones. I went grocery shopping today and was excited to buy different pieces of fruit and veggies. I did buy a bag of york peppermint patties for an after dinner treat. YUM! I deserve it. Enjoy your 21 days. I can guarentee you won't be the same when you are done!

Day 10

I got great news last night from Barbs husband Dave. They chose to do the cleanse together and both have seen gret results. However, when Barb started noticing her husband complaining less of his chronic leg pain, she started to question him about any physical changes he's noticed.

His reply was, "the cleanse is great. I feel really good. My leg that is compromised with circulation due to my blood clot, has stopped causing me pain. I used to get to a point where I was uncomfortable, had to walk around, or want to go home if Barb and I were out. Until she asked me about the pain, I forgot about it." Amazing huh?? I guess it's because of the cleanse or is this by chance????

I replied back to him, "I love it! I'm sure its because of the cleanse. 1st: your blood is being circulated better because its getting filtered through the liver more efficiently. 2nd: your body was given a lot of healing support from the products and the healthy food you have been eating."

That's an amazing success. Keep it up!!!

Day 9



Yum!!! This was the best dinner I think I've ever cooked. I made fresh Tilapia with brown rice and an assortment of peppers and mushrooms. Not only was this super healthy, but it tasted incredible. I can't believe I actually cooked it (with a couple tips from dad.) Thanks dad!

Day 8


Today was great. We are in the home stretch now because we have now added lean protein (chicken/pork/fish, whole grain brown rice and 2 eggs a day! We got so used to just fruits and veggies our bellies can't fit all this other food. It was a nice change eating meat again. I love chicken. I'm going to the store today to buy some yummie fish. REFLECTION

This week has been a life changing experience for me. I have felt better this week than I have in years. I am more "present" and experience less stress and anxiousness. It has taught me great discipline in many ways, not only with my eating habits but in many areas of my life.

In talking with a new patient of mine this week, we got on the topic of World War 2. Now in her 80's, she was telling me about raising her children while her husband was at war and eating rations of food for her family. She said the butcher would let the town know they got meat in and they would stand in line for an hour with her children just for a piece of beef. After she told me this i started to put things into perspective. Many of us are so lucky we have an unlimited supply of food at our fingertips. Fast food didn't exist 50 years ago, all the vegetables were grown locally and our meats didn't contain all the chemicals they do now.

Going through the cleanse has taught me to be grateful for the food I'm eating (because it was all I was allowed to eat) and be creative with what I had to cook. The cleanse was a challange, but in the end it was the best thing I've done and i'm so proud of myself and my "team" of guinee pigs who are doing it with me.

Day 7

Today was a home cleanse. I went cleaning crazy today and spent the morning cleaning the barn and my house from top to bottom. My new found energy is getting put to great use. It felt great to get rid of a bunch of old stuff and organize my kitchen drawers.

Another exciting part of today was knowing I get to make chicken tomorrow!!! As we speak, I am making my brown rice for the week. I'm so excited... I was going to pick up chicken today, but I forgot. My soup has been amazing. I love eating warm food! I don't think i'm supossed to be eating soup but my body loved it. I can't wait to eat real food tomorrow.

Day 6 1/2

Mmmmmmmm!! Good!!!!!

The finished product was great! It actually tasted great without seasoning and all he extras! I can't wait to make this again. (for those of you who know me, that is an unfamiliar statement coming from me!)

I love my new found love for food!

Day 6

I had a fantastic day today. I had school from 8 AM-5PM today, my fear earlier in the week was getting through school. Usually, once I get in my last class I start getting a little anxious to get home and if the teacher went a minute over class time I started to get agitated and frustrated. (all signs that the liver is out of balance). However, this week was the first time I pleasantly stayed in class until the end and didn't even find myself looking at the clock. Huge progress for me! I wasn't hungry at all, and the beauty of the program is you are allowed to EAT and MUNCH ALL DAY. I kept my energy up all day and again all my classmates couldn't believe the changes in me (either could I.) I would have never expected to get the clarity and peace that I have experienced this week. In Chinese Medicine, the Liver holds the emotion ANGER, so with cleansing you are freeing up that emotion and feeling of frustration and you feel fantastic.

So, with my new found energy and happiness (and keeping up as Silverdale's Top Chef), I kept my promise of the Cabbage and Tomatoe soup. The pictures are below. Click on them to see how yummy this super healthy and easy to make soup turned out.

INGREDIENTS AND DIRECTIONS:

Sate fresh garlic, red onions, mushrooms (i used portabella and regular), carrots, and celery.

After about 8 minutes, I added Organic tomatoes Sauce and Whole peeled Tomatoes.

Add enough water to cover all vegetables and desired amount of soup.

Once mixed together, add cut up cabbage leafs (I boiled a head of cabbage the night before) and fresh Organic Kale.

Stir and Cook for about 1 hour or until vegetables are soft.

*while on the cleanse, no seasonings or salt should be added. Thanks to the advice of Chef KIM, sateing the vegetables and garlic first gives the soup flavor.

Day 5

Wow!!! Everyone at school says my eyes look clearer, I look brighter and seem less like a roller coaster of energy today!!! I feel like my face has gotten tighter, my pants looser, and my energy is more vibrant. Just goes to show what good food and no carbs and sugar can do for you. I've also turned into Silverdale's Next Top Chef! On this program you are forced to become creative with what you have to eat. I was really craving warm foods (in Chinese Medicine Cool uncooked foods isn't the best for me anyway), so I got some help from old George Foreman and fired up the grill. (not really, just plugged it in with less cleanup) I cut up mushrooms, peppers, and asparagus and cooked it on the grill and it was delicious. Who knew veggies could taste so good. I also steamed some broccoli and spinach, but the spinach didn't survive my kitchen. Better luck next time! Stay tuned tomorrow for Cabbage and Tomatoe soup with a yummy veggies added to it. The most incredible transformation of all is my new found desire to cook. Everyone who know me, know I don't go to the grocery store let alone cook! I actually look forward to it now, and I may have my mom convinced the program is great. AMAZING~

Directions and Ingredients:

Portabella mushrooms, asparagus, onions and green peppers.

I used the George Foreman Grill (it makes cooking and clean up so much faster.)Place a little olive oil on the grill and place veggies on for about 7-10 minutes. After a few minutes you can put a little more olive oil over veggies.

In weeks 2 and 3, George is going to be my new best friend. We get to start cooking CHICKEN on Monday. I'm so excited!!!

Day 4

I had a great day today. After work I usually have low time before school where my energy dips to nothing. Today, I didn't need a nap, I went to the grocery store, and even took care of a dog before going to school and getting home at 10:30 PM. The other amazing thing....for the first time I studied in my bed till midnight without falling asleep! It paid off, I did great on my quiz the following day!

Day 3

I did great today! I'm sleeping through the night where as prior to the cleanse I was tossing and turning all night. My energy is great and I can feel my body shrinking. The first few days are the toughest but once we got in the groove we are doing much better. Dave, Barb's husband, is doing the best. He's being creative with his shakes, hasn't complained a bit, and absolutly LOVES the program!

Day 2

Today was a bit of a challenge for both Barb and I. I was experiencing headaches but I don't know if it was from the detox or the fact that my ear got bit by something and I looked like Dumbo! Hunger has not been an issue and everyone is doing great.

DAY 1

We made it through day one of our 21 day cleanse and we did better than expected. The easiest way to not get hungry was cutting up veggies and fruit so we could have it throughout the day. A huge positive was waking up this morning and not even thinking about hitting the snooze button which has creeped into my morning habit! I woke up refreshed and full of energy. That was a huge plus for me seeing as i'm trying to get myself up earlier each day. Check back tomorrow as we continue this journey.
